Kick Butt Vegetarian Tacos

Lack of knowing what to do with certain foods is a real problem for people wanting to eat healthfully. From time to time, I’ll post some of my favorite recipes here. This is one I created one day and just love to make over and over again. It packs a real nutritional punch and is super tasty as well. I LOVE ethnic foods by the way. Many other countries other than the U.S. are experts at incorporating plant food into their food. Exploring foods from other societies has been a real boost for me in being able to eat well and enjoy it.

Sorry..I usually wing it so the amounts are not exact.

Swiss Chard, black bean, & mushroom tacos

2 bunches swiss chard
2 chopped shallots
1-2 cans black beans…or better yet, use your own cooked beans
1 poblano pepper (roasted, peeled, and cut into small pieces)
2 handfuls of sliced mushrooms of your choice, I like crimini or portobello.
2 limes
2 or 3 tablespoons of Masa, or a thickener of some sort.
a bunch of corn torillas (I like to make them fresh…it’s a lot of work but GOOD)

Saute the shallots and mushrooms in a little bit of canola oil in a BIG pan. Add the black beans with the juice, poblano peppers, and swiss chard…let the chard wilt and simmer for about 20 minutes. Sprinkle in the Masa to thicken it and simmer for around another 10 minutes. Squeeze juice from 1 or 2 limes in it. Add some salt to taste and serve with some fresh corn tortillas to make some yummy soft tacos.

This also makes a great filling for tamales or burritos as well. Get creative with it.
